In the Month of February it's all about Recipes from the Heart and this is one of my favorites. I will be preparing this one for some Friends this weekend.

CREAMY DREAMY CREME BRULEE'

Ingredients:

8 egg Yolks
1/3 Cup granulated sugar
2 cups half and half (or heavy whipping creme for those days when calories don't scare you)
2 tsp vanilla extract
1/4 cup thinly sliced almonds
1/4 cup firmly packed brown sugar (for the carmelized tops)

Preparation:

Preheat the oven to 300 degrees. In a large mixing bowl whisk together the egg yolks and granulated sugar until the sugar has dissolved. When the mixture becomes pale yellow, whisk in the half and half and vanilla. Blend well. Skim off any foam or bubbles that may have formed on top. Divide your mixture amoung 6 ramekins and set them into a large baking pan with high sides. Pour in 1 to 2 inches of water for a water bath.

Carefully place each cup into the bath, and bake for 55 minutes. The edges will be set, but the centers will still appear loose. Slowly remove the baking pan, leaving the reamekins in the water bath until the water cools. Remove the ramekins, cover with aluminum foil, and refrigerate for 2 hours (You can safely keep each dessert covered in your refrigerator for up to 2 days.

When ready to serve, sprinkle on each an equal amount of almonds and then brown sugar. If you have a hand held kitchen torch, use it to carmelize the sugar, if not place the ramekins under the broiler to carmelize. Refrigerate the ramekins for 10 minutes. Serve and enjoy.

White Bean and Chicken Chili

Ingredients
2 tablespoons olive oil
1 large onion, chopped
4 garlic cloves, minced
2 pounds ground chicken
1 teaspoon salt, plus more for seasoning
2 tablespoons ground cumin
1 tablespoon fennel seeds
1 tablespoon dried oregano
2 teaspoons chili powder
3 tablespoons flour
2 (15-ounce cans) cannellini or other white beans, rinsed and drained
bunch (about 1 pound) Swiss chard, stems removed, leaves chopped into 1-inch pieces
11/2 cups frozen corn, thawed
4 cups low-sodium chicken stock
1/4 teaspoon crushed red pepper flakes
Freshly ground black pepper for seasoning
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh flat-leaf parsley
Directions
In a large heavy-bottomed saucepan or Dutch oven, heat the oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for 30 seconds. Add the ground chicken, 1 teaspoon salt, cumin, fennel seeds, oregano, and chili powder. Cook, stirring frequently, until the chicken is cooked through, about 8 minutes. Stir the flour into the chicken mixture. Add the beans, Swiss chard, corn, and chicken stock. Bring the mixture to a simmer, scraping up the brown bits that cling to the bottom of the pan with a wooden spoon. Simmer for 55-60 minutes until the liquid has reduced by about half and the chili has thickened. Add the red pepper flakes and simmer for another 10 minutes. Season with salt and pepper, to taste.

With Valentines Day on the Horizon...Some Helpful Tips for Roses

Have your solution mixed properly and ready before cutting your roses. When preparing the roses to be cut, keep as much of the foliage on the stem as possible. Only strip the foliage that will below the water line of your buckets. The foliage are the pumps that pull the water up to the bloom. The less foliage the harder it is for the rose to hydrate. Cut 3/4 to 1 inch off the stem and place directly into the solution as quick as possible. Use cold water for your solutions, it's more effective. Remember that temperature, whether water or air, is the single biggest factor in the longevity of your roses Once you put the roses in the holding solution move them straight into a cool area and leave them until you're ready to design and place.

Once you introduce the roses to a vase solution (full load sugar solution), you're telling them you want them to open and perform now. The holding solution has enough sugar in it to stabilize your roses but not promote opening.

It's also important to say again that temperature is the single biggest factor in the longevity of your roses. Keep them as cold as you can, as long as you can. The temperature of your cooler,refrigerator or outside porch should be 34 degrees not below or as close as you can get to that number. Every degree matters. You don't want to freeze them.

I hope this helps you with processing and preserving your gorgeous roses for as long as possible. Now enjoy and stop and smell the roses.

NFL Playoff Game Food Pic of the Week

Ravens vs Houston .....Can't do Chili but I can suggest some Blazing Baby Back Ribs for this playoff game.

So put the Beers on Ice and get ready to Cheer the Ravens onto a Victory on Sunday, January 15th at 1PM.

Paprika Glazed Baby Back Ribs:

The Paprika glaze we use here punches up the flavor of these Baby Back Ribs. You can use Sweet Paprika or a combination of Sweet and Smoked (That is my choice); the smoked version gives a little more PIZAZZ OR PUNCH. Whichever you use, be sure that it has not been sitting in the cupboard for more than a few months or it will have lost it potency.

Ingredients:

2 racks of baby back pork ribs (4 pounds total) cut into individual ribs
6 cloves of garlic finely chopped
1 1/2 Cups of Dry Red Wine
1/2 Cup of Water
2 Tblssp of Sweet Paprika or 1 Tblsp of Sweet and 1 Tblsp of Spanish Smoked
3 Tblsp of Sherry Vinegar
1 1/2 Tblsp of Dark Brown Sugar
1 Tblsp of Salt
2 tsp of Black Pepper

Divide the ribs into 2 large seal able bags. Mix all of the ingredients in a bowl and pour over the ribs, dividing marinade evenly between the 2 bags. Seal the bags, pressing out excess air. Marinate the ribs, refrigerate, turning bags occasionally over a 24 hour period.

Put a rack in the middle of the over and preheat over to 375 degrees
Transfer ribs and marinade to a large roasting pan large enough to hold them in one layer. Roast ribs turning them every 30 minutes until they are good and tender, well browned and marinade is slightly thickened and reduced to about 1 1/2 cups approx 2 hours.

Let the ribs stand, loosely cover with foil for 5 minutes
Skim fat from the marinade and serve marinade with the ribs. Serve on a platter with Purple Kale and Cabbage

Don't forget to give your guest Wet Wipe packets.....

Ingredients

2 tablespoons butter
1 medium green bell pepper, diced
1 medium onion, diced
2 stalks celery, diced
1/2 of a 10 3/4-ounce can cream of shrimp soup (discard top half and use bottom part of soup)
1 cup mayonnaise

Directions

Preheat oven to 325 degrees F.

Melt the butter in a skillet over medium heat. Add the bell pepper, onion, and celery and saute for 2 minutes. In a bowl, combine the soup, mayonnaise, Parmesan, crabmeat, shrimp, and pepper. Stir the sauteed vegetables into the seafood mixture and spoon this mixture into a lightly greased 8 by 11-inch casserole dish. Bake for 30 minutes. Serve with toast points or crackers.

This Weeks Food Pic is Supreme Ham and APple Slaw Sandwich with Tangy Mustard

Ingredients:
8 Slice Sourdough Bread
4 Slices Swiss Cheese
8 oz of Shaved Peppered Ham
1/2 Cup Dijon Mustard
1/3 Cup Creole Mustard
1 Tbsp Cane Syrup
1//s Tblsp Honey
1 Tbsp of Bourbon

Apple Slaw: 1 Cup Napa Cabbage sliced thin
1/4 Cup Red Onion sliced Thin
1 Apple cored and clised thin
1/2 Tbsp jalepeno diced
1 ox golden raisins
1ox slivered almonds toasted
1/2 Tbsp chopped mint
1/2 Tbsp Honey
1/4 cup Mayonaise
Salt & Pepper to taste

Method: For the Mustard, combine all the ingredients and mix well. Refrigerate. FOr the slaw combine all the ingredients and mix well. Asjust the seasoning with slat and pepper refrigerate.

Presentation and Plating Style:
Spread the Mayo on each slice of Bread. Place a slice of cheese on each piece of bread. Top with the shaved pepper ham. Top the ham with 1/4 cup of the slaw, Cut on bias and serve with a Dill pickle and Chips....Don't forget the Cold Beverage of choice.

Come see the lights in Hampden. They put on a Christmas light display that is surely visible. The neighbors in this block of row houses string Christmas lights across 34th Street.

The lights stay up until January. Most nights they are lit from dusk to 11 p.m. But they shine all night Christmas Eve. This New Year's Eve look for a Time Square-style ball drop.

To see the lights (700 block of 34th St., between Keswick Rd. and Chestnut St.), park nearby and walk. The street is open to cars, but traffic (on 34th St. and leading up to it) moves extremely slowly. Plus pedestrians, dazed by the holiday lights, make navigating tricky.

Well since the game is at 4PM on Sunday November 13Th, I thought a good old Comfort Recipe would do the trick and one of my all time favorites is Kielbasa, Kraut and Horseradish Mash Potatoes.

This recipe is easy to assemble. Simmer in a Crock pot nice and slow on low until Game Time.

Sit down and settle in with a Cold Beverage of choice and watch the Ravens beat the Sea Hawks.

Ingredients:

1 Pound of Fresh Kielbasa
1 Pound of Fresh Kraut
6 Large Potatoes
1 tsp of Fresh Horseradish
1/4 Cup of Sour Cream
1 Cup of Dark Beer
Fresh Hoggie Rolls
Spicy Brown Mustard

Preparation:

Put a layer of the Kraut on the Bottom of the Crock Pot
Then put in the Kielbasa, Whole or Cut up, your choice
Put the remaining fresh Kraut on Top
Now here's the Secret, Sprinkle a layer of Dark Brown Sugar on Top
Pour in the Dark Beer, press start and your off to a fabulous Kick Off Meal!

Right before the Game boil and Mash your Potatoes, Add Butter, Sour Creme, Horseradish, Salt and Pepper, Great side to serve with the Kielbasa

Prepare your Hoggie Roll with some Spicy Mustard, Kraut and Kielbasa and some fresh Horseradish if you like. Enjoy!

Try some RAVENS BEER with this dish, it's delicious!

Charlie Brown is known for missing footballs, incurring bad luck, and consorting with a literary dog, but now Charlie and his neighborhood gang are going green for the Peanuts…Naturally exhibition at the Maryland Science Center.

This exhibit takes a light-hearted look at Charles Schulz’s exploration of the natural world through Peanuts comic strips, videos, objects, and interactive stations. Visitors get a Peanuts-eye view of the universe, “web of nature,” trees, birds, the elements (snow, wind, rain, and clouds), gardening, and Charlie Brown’s EPA escapade. Activity stations allow kids of all ages, from pre-school to adults, to learn more about and appreciate the wonders of the natural world.
