Great Summer Appetizer-Chicken Pizzaiola Brushetta

Chicken Pizzaiola Brushetta

Ingrediants: 4-6oz Boneless CHicken Breast flatened
1/2 Cups of Capicola Diced
1/2 Cup of Thinly sliced Mushrooms
1/2 Cup Green Pepper sliced thin
1/2 Cup Spanish Onion, chopped
1/2 Cup diced Fresh Tomato
1 t crushed garlic (I like more)
1/2 tsp Dried Basil
4 T of Tomato Paste
1 Cup of Mozzarealla shreded
16 Baguette rounds
4 T of Virgin Olive oil

Instructions: Drizzle the Baguettes with the Olive Oil and toast. In a mixing bowl mix together the Capicola, Mushrooms, Peppers, onions and tomatoes. On a Sheet pan sprayed with Pam, place the Chicken Breast, spread 1 Tbl each on the breasts, top evenly with the mixture and sprinkle with a 1/4 Cup Mozzarella. Bake 20-30 Minutes in a 200 degree oven or until chicken is cooked and topping is golden brown. Remove from oven. Cut each breast into quarters.

Presentation/Plating Style: Use large decorative Platter
Place a piece of chicken on each baguette round. Place on platter and garnish with fresh basil and teardrop tomatoes and drizzleswith Extra Virgin Olive Oil.

Defenders' Day - The Star - Spangled Banner Weekend!

Come to Baltimore and enjoy the festivities at Fort McHenry over September 11 - 13, 2009. Make it a mini vacation and place your reservation today at the Hilton Baltimore BWI Airport hotel. We are located a short car ride from Fort McHenry.

Join us for Fort McHenry’s flagship event! This three-day encampment and extravaganza is celebrated with over 100 War of 1812 reenactors, parades, military bands, fireworks, a symbolic ship-to-shore bombardment and much more!

The Star-Spangled Banner Weekend honors Defenders’ Day, Baltimore’s oldest holiday commemorating the bombardment of Fort McHenry and the writing of “The Star-Spangled Banner!” Events begin with a Friday evening ceremonial procession of War of 1812 “soldiers” from the Star-Spangled Banner Flag House to the Inner Harbor, followed by a ceremony at the amphitheater. After the ceremony the reenactors will board sailing boats and return with the 30’x42’ replica flag to Fort McHenry.

Saturday and Sunday, activities include children’s programs, historic boats, military encampments/demonstrations and a “privateer’s auction” of “captured goods.” Saturday evening’s program, beginning at 6 p.m., features a concert, a musket firing tactical demonstration with volunteer reenactors from all over the country (narrated), a symbolic ship-to-shore bombardment and evening fireworks show.

Fees: Adult (16 or older) - $7.00 (7 Day Pass) Children (ages 15 or younger) are admitted free of charge
